The famous matured salami made from pure meat from Italian pigs, to which only a little salt and black peppercorns are added and which is seasoned with wine and garlic.
For the "creation" of the salami, Cavaliere Umberto Boschi uses only the piece of meat called "Trito di banco" (part below the shoulder), a precious piece - of which each pig has about 1.5 kg.
After the mass has been stuffed into natural pig intestines, the salami is tied by hand with a string made of natural fibre. At the end of its natural maturation, the Salame Felino IGP steals our senses with a delicate fragrance and a sweet, slightly spicy taste.
