Wine production | Following flotation, alcoholic fermentation begins in temperature-controlled tanks at 14–16 °C. The two-week fermentation at low temperatures preserves the fresh primary aromas. The wine is then aged on the fine lees for around one month, with repeated bâtonnage ensuring greater body and roundness. Bottling takes place in early spring.
