Hot salt plate
The salt plate can be heated to prepare food on it. To cook the food completely through (fish-meat-vegetables), heat the convection oven to 250°. Place the salt plate in the oven and heat for 20-30 minutes; it must reach a temperature of 200-220°. Now you can take the salt plate out of the oven and very carefully place the food on it. Then, depending on the thickness of the food used, place everything in the oven again for a few minutes at most.

The sweet salt of Cervia is unique in the world. The salt plate can also be cooled so that the product placed on it stays cold, with the advantage that the food does not stick to the stone. To do this, place the salt plate in the blast freezer for 6 hours at -25/-30°C or in the freezer for at least 24 hours.
