Le Tamerici is a place where gastronomic tradition meets research and experimentation – a microcosm dedicated to a passion for the local area and the culture of food in all its forms.
Founded in 1991 out of Paola Calciolari’s passion, the company produces high-quality preserved foods, particularly jams and mostarda. It rediscovers typical ingredients from the Mantua region that have now fallen into obscurity, such as the Campanina apple or the white watermelon, and uses unusual varieties of fruit and vegetables for candying, such as green tomatoes and pumpkin.
Each ingredient is selected and processed whilst fresh, following specific times and methods that preserve colours and flavours without the use of preservatives, additives, thickeners or antioxidants.
