The culatello is known all over the world as the "king of sausages".
In the past, when pigs were still slaughtered at home, the culatello was intended for sale together with prosciutto. The pig butchers were very careful in their production because a large part of the family's livelihood depended on the quality of this sausage.
To make a culatello, a prosciutto is "sacrificed" - the processed part is the same, namely the leg of the pig. The entire production process is carried out by expert master craftsmen. The slow maturing process requires it to "rest" for at least a year.
The taste cannot be described, you can only taste it for yourself with a glass of wine from the hills of Parma.
