Cooking instructions
After removing the bag, label and elastic net, soak the trotters in cold water for at least 12 hours before cooking. Then scrape off the bark with a knife, which you also use to make a small incision between the two longer nails. Knot one end of the net, insert the trotter from the binding side, stretch the net along its entire length and then clamp it to the four end nails. Put the trotter in a pot with plenty of cold water and bring to the boil. From now on it should cook on a low heat for about 3 to 3½ hours. When cooked, turn off the heat and leave the chicken thighs in the broth for about a quarter of an hour, then they can be served. It is recommended to serve it with mashed potatoes or lentils.
