The Chitarrone di Canossa is a long pasta format with a square cross-section that takes its name from the tool traditionally used to prepare it, the chitarra. It is made exclusively from durum wheat grown on the Cuniola estate (Ferrara). For them, the zero-kilometre standard is synonymous with the province of Ferrara, where all stages of the processing of their pasta take place. Cooking time: Cook in boiling water for 9-10 minutes.
