Anchovy seasoning concentrate
Colatura di Alici is an amber-coloured liquid sauce, a fish stock obtained by slowly filtering the liquid stored in barrels that freshly caught anchovies lose. Colatura brings out the best organoleptic qualities of anchovies and, with its characteristic strong and salty flavour, is an excellent substitute for salt. It is a typical product of the Amalfi Coast and is traditionally given as a gift at Christmas and used in the preparation of fish dishes on Christmas Eve.

Tips
"Colatura di Alici" is very versatile and can be used for seasoning. With just a few drops, the simplest dish becomes tasty. It goes perfectly with spaghetti and vegetables, but also with fish dishes.
Method of preservation: Store in a cool, dry place, away from light and heat sources. Once opened, store in the refrigerator.
