The Vignola cherries, from which our balsamic vinegar is made, come from the area between the provinces of Modena and Bologna. This is one of the most famous fruit-growing areas of Emilia-Romagna, a foothill strip with ideal characteristics for the cherry tree, which has grown here since the mid-19th century.
Thanks to its exceptional characteristics, the Vignola cherry was recognised as an IGP (Protected Geographical Indication) in 2013.
The dense, enveloping flavour, the intense aroma, the harmonious balance between acidity and sweetness: all this is in these small red fruits, which in their different varieties reach blood-red or more sanguine hues.
