It is a small salami made from the "trimming" of the culatello, the pieces of meat that are removed to give it the classic pear shape.
Strolghino comes from the dialect word strolaga, "fortune teller", owing to the fact that their ripeness allowed one to predict how the larger sausages would turn out. But some believe the name comes from the fact that you had to be an astrologer to prepare and store them properly.
