TENUTA BARON
SELECTED BY GOURMORI.
In the heart of a magnificent ten-hectare estate, surrounded by the rolling hills of the Treviso Prealps, stands Tenuta Baron, a "boutique winery" producing excellent wines and fine oil. Ancient country residence where the King of Italy Vittorio Emanuele II stayed several times, the seventeenth-century Villa Persicini dominates the park of centuries-old olive trees embraced by the vineyards that surround it.
The beauty here is at home, in a splendid balance between a rich and generous nature and the historicity of the buildings that emerge there, restored with great sensitivity by the current owner, the entrepreneur Domenico "Nico" Baron, who forty years ago bought the estate, restored the historic vineyards and the centuries-old park, thus realising his bucolic dream.
To the north of the estate is the storage cellar, dug into a hill to create a naturally air-conditioned environment with temperatures between 16 ° and 18 ° to ensure optimal preservation of the wines. The wood ageing of the red wines, on the other hand, takes place in the villa's old cellar, which was dug by hand during the construction of the house and is located in the central body. Protected by the original stone walls, the oak barrels rest for months, sometimes even years, bringing the magic of flavours and aromas to a close.
