The cows of the breeds Holstein, Brown Swiss, and Rossa Reggiana are raised only in mountainous regions and differ in the balance between quantity and quality of the produced milk, which is exceptionally healthy and has a yield in cheese production slightly above average. The milk of the Brown Swiss is particularly suitable for the production of typical cheese such as Parmigiano Reggiano.
