PARMIGIANO REGGIANO BERGKÄSEREI COLLINE DI SELVAPIANA E CANOSSA

PARMESAN MOUNTAIN CHEESTER HILLS OF SELVAPIANA AND CANOSSA

        SELECTED BY GOURMORI.
The Parmigiano Reggiano tells of an extraordinary journey that lasts thousands of years. With the same passion and the same ingredients, a true masterpiece is still created today in the same places: the Parmigiano Reggiano.
Giovanni Boccaccio, Decameron, 1351, described the land of Cockaigne as follows:
„There was a mountain made entirely of grated Parmigiano cheese, on top of which there were people who did nothing else but make macaroni and ravioli and cook them in capon broth, and then they threw them down, and whoever took the most, had the most.“
Every day since its inception, it is pampered by knowledgeable craftsmen until the masterful tasters and testers deem it finished and ready to bring emotions to the tables of gourmets. Each production area of Parmigiano Reggiano provides the best feed for the cows depending on the season, whose milk is processed to perfection by the dairies. For this reason, Gourmori has decided to present not just a dairy to the public. During this time of year, I suggest you get to know the San Bernardino dairy and the Colline di Selvapiana e Canossa dairy.

Cheese factory Colline di Selvapiana and Canossa.
Since its inception, Caseificio Colline di Selvapiana e Canossa has made quality its mission and is committed to providing end consumers with a safe, authentic Parmigiano Reggiano with a distinctive taste. This commitment has been recognized over the years by all partners and has been awarded multiple times at the most important international events in the dairy and cheese sector, as well as at major agricultural fairs. These important recognitions enhance the constant effort throughout the production chain to achieve the highest quality standards.

The extraordinary properties of mountain milk, combined with knowledgeable and attentive production, have enabled the cheese factory to receive numerous awards.

Particularly, the cheese factory has received three important quality certifications and has achieved high standards regarding the safety and quality of the products.
BRCGS (British Retail Consortium): Level AA
Standard for food safety, important especially for businesses in the British market.

IFS (International Food Standard): Higher level.
Confirms the competence of companies in the food sector regarding quality and product safety.

Recognition "Bergerzeugnis" for the Parmigiano Reggiano of the cheese factory.

        ANIMAL WELFARE LABEL.
The animal welfare label for Parmigiano Reggiano with the serial number 417 from the Selvapiana dairy and the Cigarello dairy is just the latest result of the innovation policy with which the group is revolutionizing the production chain of this famous Italian cheese product.

The cows of the breeds Holstein, Brown Swiss, and Rossa Reggiana are raised only in mountainous regions and differ in the balance between quantity and quality of the produced milk, which is exceptionally healthy and has a yield in cheese production slightly above average. The milk of the Brown Swiss is particularly suitable for the production of typical cheese such as Parmigiano Reggiano.
