However, in relation to the municipal land of Cervia, the saltworks are very large, covering 827 hectares, one third of the whole area. The Saline is a state nature reserve where animals can settle and nest, a gateway to the south of the Po Delta Park and a wetland of international importance according to the Ramsar Convention.         The sweet salt of Cervia is unique in the world. Its peculiarity lies in the human factor, which ensures that the harvest is directed so as to obtain a pure salt with a very low content of bitter chlorides (these include magnesium sulphate, calcium sulphate, potassium sulphate and magnesium chloride). This is why our salt is "sweet". Cervia sweet salt is also a full sea salt. Sea salt, because it is extracted from seawater; wholesome, because it is processed only with mother liquor, without the use of other additives. It is not bleached and contains no anti-caking agents. Therefore, the trace elements and the natural moisture are also preserved in the packaging.
