        From a unique story, a balsamic vinegar made from cherries exclusively.


        The Vignola cherries from which our balsamic vinegar is made come from the area between the provinces of Modena and Bologna. This is one of the most famous fruit-growing areas of Emilia-Romagna, a foothill strip with ideal characteristics for the cherry tree, which has grown here since the mid-19th century.


        Thanks to its exceptional characteristics, the Vignola cherry was recognised as an IGP (Protected Geographical Indication) in 2013.


        The dense, enveloping flavour, the intense aroma, the harmonious balance between acidity and sweetness: all this is in these small red fruits, which in their different varieties reach blood-red or more sanguine hues.


        Cerasus Sanguine cherry balsamic vinegar is produced through an innovative ageing process to obtain an unadulterated, fragrant product that enhances the flavour of the dishes with which it is served, while preserving the therapeutic properties of the raw material from which it is made.


        Unlike wine vinegar, our cherry balsamic vinegar does not have to mature in barrels, but only rest for about a year to stabilise while preserving its precious organoleptic properties.


        The cherry, in fact, contains antioxidants that prevent heart disease and fight free radicals. The flavonoid quercitrin, which is present in large quantities, is one of the most powerful anti-cancer agents, able to fight cancer cells.
