        Pasta Dallari has been produced for 70 years with a selection of high quality raw materials: coarsely ground semolina of the first extraction after selecting the best durum wheat varieties, 100% Italian and carefully controlled, fresh eggs from naturally fed Italian hens for a golden and porous dough, a unique taste and a perfect cooking result. But that's just the beginning: it's the only dried pasta with egg that consists of three ingredients: flour, egg and an Emilian heart.

        Dallari puts the Emilian heart into its pasta: this is what makes the difference, the careful and loving work for people who love special things. So each product is made with machines designed and built by pasta masters to remain faithful to the typical Emilian production.

        All formats are created directly from the dough with a "soft" kneading process that leaves the organoleptic characteristics of the raw materials unchanged. To also preserve the typical wrinkliness and opacity typical of handmade pasta, the dough is drawn through bronze moulds and deliberately cut irregularly for the tagliatelle.

        A process that is underlined by the slow drying at low temperature, which preserves the fragrance and colour of the wheat: Pasta Dallari is so good that you could eat it just like that, without sauce.
