Pasta di Canossa is made in Ferrara near the Cuniola estate, with only durum wheat cultivated. For over a century
the Canossa family has been taking care of these lands and the pasta factory near the estate is a decision of commitment and passion that has become
synonymous with supply chain and overall quality.

WE DATE OUR PASTA
With our Cycle_Life, we carefully follow the entire cycle of our pasta: The entire production process is carefully monitored and each stage is dated. We track the entire life cycle of our durum wheat from the ripening stage
Seeds: Day by day, season by season we track its growth until we produce our pasta.
SLOW DRYING
Drying in the pasta factory is slow, from 14 hours for short pasta to 20 hours for long pasta, to give it the right consistency and porosity. We give the pasta the time it needs to develop its flavour.
In the heart of Emilia, from the wheat of our land, a bronze-coloured semolina pasta with an ancient taste and a unique colour is born.
OUR PASTA
This is an artisan Italian pasta made from pure semolina. The traditional bronze drawing gives it a distinctive colour and a special roughness to better absorb the sauces.
